Oatmeal Bread

1 pkg. dry yeast

1/2 cup warm water

1 cup quick oats

1/2 cup whole wheat flour

1/2 cup brown sugar

1 T. salt

2 T. margarine

2 cups boiling water

5-6 cups flour (part whole wheat)

 

This also makes wonderful rolls. 
Divide each half of dough into 12 pieces, form into rolls, allow to rise, and bake.

  1. Dissolve yeast in warm water. Set aside.

  2. Combine oats, 1/2 cup whole wheat flour, brown sugar, salt, and margarine.
    Pour boiling water over mixture and mix well.
    Cool to lukewarm and add yeast.

  3. Gradually add flour, stirring with spoon, then kneading by hand.
    Let rise until double in bulk and punch down.
    Shape into two loaves and allow to rise again.

  4. Bake at 350 degrees for 40 minutes.
